With his excellent culinary skills, years of experience, and focus on creating refined dining experiences, Chef Shane Straiko is bound to leave guests with a lasting impression. Shane takes great pleasure in creating and enhancing menu options and dinner features—each inspired by flavours and cultures from around the world. With over 20 years of (international) experience working with a range of reputable chefs at different restaurants, resorts and cruises, creating refined dining experiences is nothing new for Shane.
Read on to learn more about our chef, as well as what he means for The Oxford Hills, KALOS, and our community:
Raised locally in Tillsonburg, Ontario, chef Shane discovered his passion for both the region and culinary art at a young age. Growing up with fabulous food and nightly family dinners, becoming a chef came as a natural choice to Shane. Keen to get started, Shane joined his first professional kitchen at the age of fifteen.
After taking on a five-year apprenticeship under Chef Russell Browne and Chef Rick Harris, Shane began his journey working in various boutique inns, restaurants and private clubs under a myriad of international Chefs. In 2022, he accepted a position as Executive Sous Chef at Delta/Clublink Rocky Crest Golf Resort in Muskoka, Ontario. Privileged to receive this opportunity, working closely with Chef Patrick Louch allowed Shane to showcase his passion and flair for creating new and exciting dishes for this 5-star private golf club.
This is where Shane truly fell in love with the hustle and bustle of being a chef and his undeniable passion for new ingredients and flavour profiles. Realizing that these can’t simply be found in books, Chef Shane decided to seek out new flavours and cultures by traveling and working around the world. His first stop was New Zealand, including places such as Waiheke Island and the Marlborough Sounds. From there Shane’s travels took him to Australia, Indonesia, Costa Rica, St. Maarten (Netherlands Antilles), Vancouver, and finally London (England), where he took a position as chef at The Savoy, a reputable Fairmont managed hotel.
Most recently, Shane worked as Executive Chef for Celebrity Cruise Lines, travelling from port to port and experiencing the flavours of the world while working with a diverse team of chefs. Creating up to 25,000 meals a day on some of the most modern and luxurious cruise ships in the open sea.
When Shane isn’t sharing his love for delicious food with his guests, he likes to share it with his family and friends. Not surprisingly, he remains interested in travelling, allowing him to get (re)inspired and discover new cooking techniques, ingredients, and cultures—wherever he goes.

Shane is grateful to be part of The Oxford Hills’ team and has already started to put his skills to work. Drawing on his experience from around the world, and bringing in different flavours, chef Shane will be designing menus and weekly features that are locally-inspired, unforgettably delicious, and accessible for everyone. His dishes will exemplify his passion for food—all arranged with colour, shape, texture, and flavour in mind.
The focus of, and experience at, The Oxford Hills, and KALOS restaurant in specific, will remain as is—unique, delicious, and memorable. The food at KALOS will continue to be a celebration of local ingredients and, more than ever, will allow our (sous) chefs’ skills and creativity to shine through in every dish. Shane looks forward to creating an inclusive work atmosphere, bringing all individual talent to the forefront, and allowing our chefs’ combined efforts and culinary vision to continue to prepare outstanding dishes.

As Christmas and the end of 2020 is coming closer, we’re ramping up for the revelry of New Year’s Eve (in compliance with the most recent provincial COVID restrictions)! Friday is always a good feeling, but the Friday the brand-new year starts? That’s something special. Reason enough for us to host a special New Year’s Eve event called “Champagne & Pearls” on December 31, 2021. Are you ready to ring in the new year with deliciousness, good company, and more? Join us!
Here is a bit more about the event:
The event is being held inside The Oxford Hills’ brand-new restaurant KALOS. Tickets are $100 plus HST per person, and include a 5-course meal, glass of sparkling, and a balloon drop (at the end of the event). Dinner reservations will be available at 5 p.m., 5:30 p.m., 6 p.m., 6:30 p.m., 7 p.m., and 7:30 p.m., and each seating will accommodate approximately 25 people. (You can make your reservation here!)
Upon arrival, guests will be asked for proof of vaccination (in accordance with provincial COVID-19 regulations), after which they will be welcomed to enter the facility. All guests are welcome to stay for the duration of the event, as well as attend the balloon drop at around 9:30 p.m. (guests may leave the venue at any time if they wish to do so). Please note that, as per the latest provincial guidelines, there will be no more alcohol sales after 10 p.m., and guests will have to vacate the property by 11 p.m.
Guests are encouraged to dress up for this semi-formal event, but there is no specific dress code, nor will guests be turned away if they do not have their party outfit on!

With the first snowfall behind us, we invite you to celebrate the (start of the) festive season with us at The Oxford Hills. Soon, KALOS will officially open its doors, and we’ll be kicking off with different types of entertainment. Initial activities include an evening full of country music, our first Christmas Market, and our very own New Year’s Eve celebration! On Monday November 22, 2021, the winners of our social media photo contest (which ran from November 8 until November 14) will be enjoying an acoustic evening full of stories and country songs. This “win-to-get-in” event includes performances of the award-winning MDM Recordings roster, featuring country stars Jess Moskaluke, Don Amero, David James, Tyler Joe Miller & Five Roses.

We’re well into November, which means we’ve hit one year of solid construction. We’re the first to say that it wasn’t without any hiccups, but the first stage of completion is creeping closer and closer. Next week (hopefully) marks a milestone for restaurant KALOS in terms of its development as we await approvals on our occupancy permit, as well as health department approval to officially open the kitchen. Fingers crossed!
Here are a few things to note with regard to what this means in practice, as well as where things are at construction-wise:
Opening Our Doors
Pending approvals, we’ll officially open our restaurant and main venue at the end of November. At that time, KALOS will open at limited capacity and on a reservation-only basis. We request that guests make reservations through our website (our future reservation widget will be up and running closer to the end of November). To start, KALOS will be open Wednesday through Sunday from 4PM until 9PM. More information will follow soon. Please stay tuned!
Our first two official events at KALOS will be our Christmas Market (December 5, 2021) and our New Years Eve celebration, Champagne & Pearls (December 31, 2021). In the meantime, the entire team is working overtime to push the project along! Right now, 80% of the tiling on the main floor is done, and we expect tiling (on both the main floor and downstairs) to be completed by the end of November with some extra hours and elbow grease. The same is true for our elevator– with its delivery delayed due to material shortages – ultimately limiting us to upstairs occupancy only for now.
Let’s move onto the happier news! The washrooms are complete, and with all kitchen equipment, silverware and plates delivered last week, the kitchen is fully operational (pending health department approvals). Despite the fact that our purchased ice-cream machine is currently MIA (please do let us know if you know its whereabouts), the open kitchen with bar seating offers a level of entertainment on its own. It provides an opportunity for guests to follow the steps taken to turn fresh, high-quality ingredients into each mouth-watering meal. Once KALOS is open, customers can follow along with chef Eric and his team as they fire up the grill, plate dishes and more! In line with this, the separate bar is essentially complete as well (apart from some tiling). The bar’s feature wall is done and a nice touch is the addition of lights which can change colours as we see fit!
Speaking of feature walls, in order to split the venue space and separate the open kitchen and bar area from a quieter dining or event space (including gorgeous view), a sliding wall has been installed around the double-sided fireplace. When closed, each individual space will have its own purpose, including cozy atmosphere.
Now, let’s skip to the outside portion of venue, because what would a venue be without its façade? From a design standpoint, the exterior face of the building has been an important talking point as it has set the tone for the rest of the building. The exterior is bound to grab one’s attention, as the stark contrast between the wood ceiling and dark-coloured stone can be seen from the road. As if the golf course didn’t provide a gorgeous enough backdrop for wedding pictures, now the venue does too. Even so, we’re still working on some final touches such as the installation of outdoor lighting fixtures, and the golf course’s garbage bins will likely be recycled and turned into flower pots and used on the patio to create more intimate seating areas. Also, for those who have asked and are wondering what those mysterious stairs outside lead to… it’s the best roof-top view in Oxford County! For safety reasons, the staircase will not be accessible to the public, so instead you’ll have to enjoy the view from the lower level and the pictures below!
In close proximity of the staircase, the first stage of the sewage tile bed has been installed. We’re currently waiting on approval from the ministry of environment to move onto the next stage, which is expected late winter or early spring. This will allow us to bring the future routing of green #9 into play.
Finally, the rest of the paving is scheduled for the last week of November. For the golfers among us it’s worth mentioning that we’re also working on cart paths and we’re hoping to get them paved yet this year! Additionally, owner Steve and general manager Mike are working on a potential warming up area for golfers. Please stay tuned as we iron out the details!

The month of September has been marked by our Name Our Restaurant contest, and our hearts have been full ever since! The support we received from our Oxford County community (and beyond) has been overwhelming, and has warmed our hearts. We received over 500 name ideas for our restaurant, and would like to thank all of those who submitted a suggestion, as well as those who helped us spread the word on our behalf.
We are thankful for all the support and couldn’t be more excited to share the name we’ve chosen. While it took some time, discussion, late-night back and forth emailing, restarting from scratch, and Googling, we are very happy to announce the team has collectively decided on:

How We Picked The Name
Similar to our “Name Your Course contest”, we started by categorizing the submissions into broad themes to be able to make sense of all the suggestions. The categories ranged from animals to business names (references to The Oxford Hills or Theo’s), from food and restaurant specific names to geography, from golfing to views, and more.
With multiple people involved in picking the name, all reviewing the list of suggestions repeatedly, settling on a name liked by all wasn’t an easy task! It turned out none of the submitted names fully captured the essence of what we envision our restaurant to be. After exploring the options at hand and thinking outside the box, the team came to realize that the name should not only be unique, and a single word, it should also have a story and meaning behind it. And that’s how KALOS came about…
What Does It Mean?
KALOS not only represents the owner’s family (using the first letters of the immediate Bohner family names), it also means beautiful in Greek, and encompasses meanings equivalent to the English “good” and “noble”. Our restaurant is dedicated to good food, staff and atmosphere, and will without a doubt live up to its name!
We hope you’re as excited as we are to call KALOS your new favourite restaurant.
So Who Won The Contest?
But the $1,000 dining certificate question is… who won the contest if we didn’t select a name from the submissions? Invigorated by the support received, we entered all name ideas in a random drawing as a token of our appreciation.
Steve Bohner, owner of The Oxford Hills and KALOS, did the honours of blindly drawing the winner, using an online contest winner tool. As a result, we’d like to congratulate Geoff Scott for winning the $1,000 dining certificate to be used at our brand-new restaurant KALOS. We look forward to serving you soon!
